Delivering excellent coverage and stretch and blistering evenly with minimal oil-off, new Perfect Italiano Pizza Cheese is the latest addition to the extensive Perfect Italiano range.

 

The long-established and trusted brand is already well known for its Traditional Mozzarella, Ultra Mozzarella, Pizza Plus, Parmesan and Ricotta – all cheeses which are ideal for the Mediterranean cuisine menu. New Perfect Italiano pizza Cheese has been developed to the same high standards as the other products in the range and as such has been subjected to rigorous testing to ensure it meets the demanding requirements of Australia’s foodservice market.

“We have conducted extensive tests across a wide variety of foodservice customers using different ovens and temperatures, from high end commercial ovens to non-calibrated ovens such as you often find in use among independent pizza outlets,” says Mark Williams, Chef Support Lead at Anchor Food Professionals, the company behind the Perfect Italiano brand.

“We know many pizzamakers are working with ovens whose core temperatures change over different periods, so we’ve ensured this new Pizza Cheese is more rexsilient at the highest temperatures. We believe it’s the best cheese on the market in terms of its ability to withstand independent high heat. We really pushed our testing as far as we could go, at times trialling it in ovens at more than 200 degrees for up to nine minutes, which are very extreme conditions. What we found was that it’s a highly adaptable cheese that will work across all oven types from the conveyors used in independent pizza to the more traditional Mediterranean kitchen setup.”

Perfect Italiano Pizza Cheese has its own distinctive flavour profile and qualities. “It offers low oil off and minimal browning and it delivers the perfect melt for an authentic Mediterranean cuisine experience, plus a stretch that’s superior to almost anything else on the market,” Mark affirms.

“It’s also an excellent flavour carrier, which means you can use it as a base to blend different cheeses such as a parmesan, feta or ricotta. You can even add other cheeses post-cook for a more artisan effect. And because it comes in a convenient 10kg block, it’s easy to shred to the shred profile and style you want for your business.”

 

Anchor Food Professionals Executive Chef Mark Normoyle is equally enthusiastic about the new product. “I’ve trialled it in my restaurant’s woodfired oven and the performance was outstanding, but it’s just as suitable for a convection oven,” he says. “While it has that beautiful stretch, texture and smoothness, it also has the benefit of a flavour profile that isn’t overpowering in its cheesiness. In other words, it will complement rather than overwhelm the other flavours of your food – which not only makes it a great choice for pizza, but also with seafood, spicy slow cooked meat and Mediterranean style cuisine generally. You can also use it with Middle Eastern flatbreads, in baguettes or croissants – it’s a really good all-round cheese which is totally versatile.

“I would summarise it as a consistent cheese that’s a great performer when you want to put the heat up but which works equally well on a chicken parmigiana as it does on a pizza. It also has the added benefit of superior yield – which exemplifies the old adage of when you’re using quality products, less is more.”
