Place the water in a non-stick pot and bring to boil, then lower to a simmer and add the caster sugar. Whisk till all the sugar is dissolved, then add strawberry pieces. Stir and scoop up some of the sugar syrup and pour it back into pot, it will be runny; when you can do that and it drizzles off the spoon into the pot in a thick consistency, then your jam is ready.
It usually takes about 30 minutes to cook on a low heat.
Pizza:
To make the frangipani mix, place almond meal and caster sugar in a bowl. Mix and set aside.
In another bowl whisk up egg, add frangipani mix and pour melted butter on top (so the hot butter doesn’t cook the eggs). Mix and spread onto pizza base. Place eight strawberry pieces on the outside circle and four in the middle and bake for 7 minutes.
To serve, cut into eight pieces, dust with icing sugar, and place some ice cream, almonds and strawberry jam plus mint on each piece.
