Caramelised Speck and Creamy Shallot Casarecce

Creamy pasta recipe to add to your pasta menu.



  • Preheat oven to 160°C.
  • Brush charred shallot halves with clarified butter and finish in the oven for 10-12 minutes.  
  • Add remaining clarified butter and speck to a pan, and cook over medium heat until caramelised. Add sliced garlic, baked shallots and herbs to pan continue to cook for 1-2 minutes. Deglaze with stock and cook until reduced by half. 
  • Add peas and cooked pasta to the pan along with Anchor Extra Yield Culinary Cream and toss to combine. 
  • Season with salt & pepper, and garnish with shaves of Perfect Italiano Parmesan.
